UDDER VIEW FARM GOAT CHEESES





Udder View Farm’s Goat Cheeses are made exclusively from our own Oberhasli goat’s milk, which is sweet, creamy, and has a very delicate flavor.  The milk is strained, heat-treated (not pasteurized), and inoculated with cultures and rennet to begin the cheese-making process, which can take up to forty-eight hours to complete. 

Processing the milk after every milking (every 12 hours) helps to ensure the freshest, quality product we make available.
We use fresh herbs from local organic farms, herb and spice blends from other small Maine companies, and other ingredients that seem interesting to incorporate into the cheeses 

CHEVRE

Always a favorite is our marinated medallions of chevre in virgin olive oil with roasted garlic, herbs, and peppercorn, which can make a delectable meal on a toasted baguette.

Rounds and Logs of Chevre crusted with Herbs, Lemon Pepper, and Paprika are also offered

FETA

Feta is prepared on occasion and is preserved and aged in a medium whey brine.  Our feta-style cheeses are sold in wheels (7-9 oz.); half wheels; and in "crumbles".

Marinated feta in olive oil with sun-dried tomato and oregano is also a popular choice!  Toss  in pasta with some cherry tomatoes, lemon juice, and olives for a simple salad.


CAMEMBERT, ETC.

ccasionally, we offer bloomy rind cheeses, including a traditional Camembert, which is has a creamy, mushroom-like flavor.  


REFLECTION

Reflection is our own recipe and creation utilizing the basic camembert recipe and technique, but has been ash dusted prior to rind development. This cheese was named in tribute of one of our very special goats.

YOGURT DRINKS

Although we have always made yogurt on occasion, these drinks are proving to be a very popular addition to our offerings at farmers’ markets.  These 12 ounce containers of our rich, creamy yogurt are sweetened and flavored with a variety of pure extracts, syrups, and fruits.  Flavors include:
